Potato Pancakes

Bring along some applesauce, and you have a complete and satisfying meal. This recipe can serve as a side dish or the main course, and there is nothing to refrigerate!

INGREDIENTS:

1/2 cup add-water-only pancake mix
1 1/2 cup potato flakes
1 tablespoon granulated onion

PREPARATION:

  • At home: combine pancake mix, potato flakes, and onion in a small reclosable plastic bag.
  • On the trail: Add just enough water to make the mixture into an easily handled dough. Form into balls and drop into lightly greased pan smashing into patties.
  • Brown both sides and enjoy.
  • Servings: 4
    Preparation time: 5-10 minutes

  • 1 pkg. pancake mix
  • 1 pkg. potato flakes
