Potato Pancakes
Bring along some applesauce, and you have a complete and satisfying meal. This recipe can serve as a side dish or the main course, and there is nothing to refrigerate!
INGREDIENTS:
1/2 cup add-water-only pancake mix
1 1/2 cup potato flakes
1 tablespoon granulated onion
PREPARATION:
- At home: combine pancake mix, potato flakes, and onion in a small reclosable plastic bag.
- On the trail: Add just enough water to make the mixture into an easily handled dough. Form into balls and drop into lightly greased pan smashing into patties.
- Brown both sides and enjoy.
- Servings: 4
Preparation time: 5-10 minutes
