Italian Chicken

This is a great first dinner after a long day of backpacking.

INGREDIENTS:
4 small coffee cans
4 sheets of foil
4 chicken breast
1 bottle of Italian Dressing
3 green pepper
4 potatoes, sliced
4 carrots, sliced
any seasonings you like

PREPARATION:

  • At home, put everything together in the coffee cans and cover with foil. Put this in your backpack and let it marinate all day while you hike.
  • This lets the juices go into the chicken and veggies. I like to add a little salt and pepper.
  • At camp, place coffee can on grate over campfire or campstove and cook on hot coals for 45 minutes, or until done.
  • Servings: 4
    Preparation time: 45 minutes

  • 4 small coffee cans [empty]
  • 1 roll of heavy duty foil
  • 4 chicken breast
  • 1 bottle of Italian Dressing
  • 3 green pepper
  • 4 potatoes
  • 4 carrots
  • some of your favorite seasonings
  • Salt
