Campfire Potatoes 2

They'll fill you up, which is great when it gets cold.

INGREDIENTS:

3 pounds Idaho potatoes
1 stick butter
1 large onion
1 large green pepper
1 cup ketchup
garlic powder, to taste
salt and pepper, to taste
smooth or chunky peanut butter

PREPARATION:

  • At home: Bake 3 pounds of Idaho potatoes at 400 degrees for about an hour. Remove and cool to room temperature before putting into plastic bag for commute to the campground.

    At the campground: In a large skillet, melt 1/2 stick of butter and add 1/2 cup ketchup and seasonings to taste.

  • Add chopped onion and green pepper. Sautee for 1 minute. Add sliced or cubed baked potatoes, cover, and cook slowly so as not to break up potatoes or burn them, but get them hot. Add more butter or ketchup depending on size of potatoes. Serve with meat and eggs.
