1 8-ounce package of Spanish (yellow) rice
1 pound of whole-hog sausage
Tabasco sauce (optional)
pepper to taste
PREPARATION:
Cook rice according to package directions. Using your fingers, break up the sausage into small chunks in a frying pan. Fry the sausage until it is cooked through and is no longer pink. Find a large bowl and put the rice into it.
Then take the cooked sausage and add it to the rice. Stir well and serve. Let each person add Tabasco sauce and pepper to suit their individual tastes.
