Corned Beef Stew

This recipe is very easy to prepare, and it requires no refrigerated ingredients.

INGREDIENTS:

1 or 2 cans corned beef
4 large potatoes, diced
6 carrots, diced
1 large onion, diced
salt and pepper, to taste
Louisiana Hot Sauce, to taste

PREPARATION:

  • Put potatoes and carrots in a Dutch oven or other large pot with one quart of water. Boil until potatoes and carrots are almost tender enough to eat. Add onions and cook another ten minutes. Add corned beef last and cook for ten more minutes.
  • Salt and pepper to taste (I like to add Louisiana Hot Sauce to mine, not Tobasco). Serve hot with crackers.
  • Servings: 2-4
