Easy Chicken Pot Pie
Bake this recipe in your RV, or prepare it in a Dutch oven.
INGREDIENTS:
1 fryer chicken
2 potatoes
peas and carrots
2 cups chicken broth
1 can cream of onion soup
1/2 cup margarine
1 cup milk
1 cup flour
salt and pepper, to taste
PREPARATION:
- Boil one fryer and cool, then remove meat from bones and shred. Peel and chop two potatoes and cook until not quite done, like 6 minutes. Put the chicken in a 9x13 casserole dish and put the potatoes and 1 small bag of frozen peas and carrots over the chicken.
- You can also use canned peas and carrots instead of frozen. Sprinkle with 1/2 teaspoon salt and pepper, to taste. Mix 2 cups chicken broth and 1 can cream of onion soup (or cream of chicken) and pour over the chicken and vegetables.
- For the crust, melt 1/2 cup of margarine or butter and add one cup milk and one cup flour. Mix well and carefully pour over the chicken mixture.
Cook until brown and bubbly.
- Servings: 6 - 8
