What a great treat to go with a hot cup of coffee! And to think you can make these muffins right at your campsite.
INGREDIENTS:
either - 1 package muffin mix
or - your favorite muffin recipe
PREPARATION:
Prepare a 12-inch Dutch oven for baking at 400 degrees. Place a round metal rack in the bottom and allow the oven to warm up. In the meanwhile, prepare the packaged muffin mix or your favorite muffin recipe and pour it into a muffin tin that will fit inside the 12" Dutch oven.
The ones that make 6 average sized muffins usually fit perfectly. Place your muffins in the Dutch oven and bake until the tops are brown, or an inserted toothpick comes out clean.
It takes about 30-35 minutes whenever I make my muffins and I use 12 briquettes under the Dutch oven and 16 over.
